Ingredients
- 500g white wheat flour
- 3/4tbsp salt
- 150g Sugar
- 1tbsp mastic gum
- 1tbsp instant active dry yeast
- 180ml olive oil
- 180ml Water

- • Measure and sieve the dough in a large container. Mix in the salt, sugar, crushed mastic gum, and the yeast.
- • Add the oil and mix together with your fingers or dough mixer if available until the oil is totally absorbed.
- • Add the warm water in a small quantities each time and continue mixing until the dough is smooth elastic texture.
- • Shape the dough into small balls and flatten them out on a greased oven tray few centimeters apart.
- • Leave the cakes to rest covered with a clean kitchen towel in a warm area until they have doubled in size.
- • Bake in a hot oven 230C for half an hour
Recipe Notes
(English) For better taste sprinkle the cakes with a sesame seeds and brush them with egg whites, beaten with a tablespoon full of water.
