Instructions
- Roughly chop the pumpkin into equal size piece, sprinkle with the sugar and place on the stove (low heat) until tender, (about 45 min)
- Strain the pumpkin from the sugar water, but do not discard it.
- Mash the pumpkin into the baking dish and mix in the nuts and raisins (if you will use)
- In a pot, melt the butter then stir in the flour, cook for about a minute, then while stirring, pour in the milk.
- Add to the béchamel the sugar water (left over from the pumpkin) .
- Allow to come to a boil, then pour over the mashed pumpkin and bake in a preheated oven at 180°C for about 30 min, or the top is a nice brown color

You can cook the pumpkin 1 day in advance to save time.
