  1. Roughly chop the pumpkin into equal size piece, sprinkle with the sugar and place on the stove (low heat) until tender, (about 45 min)
  2. Strain the pumpkin from the sugar water, but do not discard it.
  3. Mash the pumpkin into the baking dish and mix in the nuts and raisins (if you will use)
  4. In a pot, melt the butter then stir in the flour, cook for about a minute, then while stirring, pour in the milk.
  5. Add to the béchamel the sugar water (left over from the pumpkin) .
  6. Allow to come to a boil, then pour over the mashed pumpkin and bake in a preheated oven at 180°C for about 30 min, or the top is a nice brown color
Recipe Notes

You can cook the pumpkin 1 day in advance to save time.
