PERSONAL BACKGROUND
Personal Background

Zeineb has been making cream, milk based foods, and most notably ice cream for the past 10 years. She moved to Alexandria as it is considered the capital of Egypt for ice-cream. Thus she left her village of Benha in order to start her own business and to learn from local producers. Eventually she set up a flourishing and successful business.

ENVIRONMENT

Zeynep’s shop is the primary venue for her production but she also works from home. The area where she works is full of different people, from tourists to fisherman, and all of them gather together in front of her shop from time to time.

As already mentioned Alexandria as it is considered the capital of Egypt for ice-cream and indeed ice cream has been made there for over 100 years.

TECHNIQUE/METHOD

She makes ice cream using traditional, non-electronic methods – which include various metal vats where the cream is mixed with fresh fruit to provide something akin to gelato

Zynep’s activity contributes to 0% consumption as she buys her ingredients from local producers. For her it is particularly important and the supports and encourages such practice.

Alexandria is a city with a long tradition of ice-cream production (at least 100 years).
