- 2kg fish
- 2tsp Lemon Juice
- 3 large onions
- 1tbsp Raisins
- oil
- 1tsp spices
- Salt and pepper
- Place fish whole (do not remove head) in lightly oiled oven pan and score diagonally 3 times.
- Rub fish with 1 tablespoon lemon juice and salt.
- Fry onion until lightly brown.
- Add raisins, seasoning, mixed spices, and remaining 2 tablespoon lemon juice.
- Stuff fish with this mixture and sew up.
- Cover with oiled paper.
- Place in preheated moderate oven, and bake for 30 minutes.
- To serve, cut off thread and drain the stuffing.
