- 1lb Whole smoked herring
- 5 green onionsFinely sliced at an angle
- 1/2 Bell pepper dicedOr 1 jalopeno pepper diced (spicy)
- 2 Limes juice
- 1cup Vegetable/Olive oil
- 12 Pita bread
- 4 Limes/LemonsCut ready to squeeze it
- Clean the fish by removing the skin and any bones. Then cut it into 2 x 1/2 inch pieces.
- Mix the fish with all remaining ingredients and stir well without damaging the fish meat.
- Refrigerate for a day before serving.
- When ready to serve, warm the breads in a 350 degree oven for 3 minutes. Cut each pita into 4 pieces and put it in a bread basket.
- Serve the salad with the lime or lemons and the pita on the side.

As most of the population of Port Said are fishermen, in their recipes they use a lot of fish products. The herring is fished during season and salted by the men in each family. The way of salting the herring has been handed down from grandfather to father to grandson. Specific months of the year the fishermen due to bad weather cannot go out fishing. So the salted hearing is their staple food during these months. |
