Instructions
  1. Sieve Flour. Add Salt and yeast. Knead gradually adding water as needed.
  2. Immediately cut dough into round pieces without leaving it to rise.Sprinkle a wooden board with radda (Bran) before placing the bread on it.
  3. Leave it rise for 15 minutes then turn over. Leave again to rise then decorate by creating shapes and patterns.
  4. Bake in hot oven for 10 minutes until golden brown

Is there some memory/historical event connected to this recipe? As Alexandria is on the Mediterranean a lot of its population are fishermen since time many women of the house used to home bake this bread which stays fresh for a long time. Their husbands or brothers as they go out to sea would take their provision of bread for a couple of days to sustain them when they are out to sail.
Personal reference to tradition transmitted by relatives (preparing together, sharing, eating together etc.)? This recipe has been handed down from mother to daughter. As this bread keeps fresh for a long time it has been used as simple bread or to be used in cooking special Egyptian dishes (like fatta which is cooked on feast days in both Islamic and Coptic communities).
