Instructions
  1. Empty the inside of the eggplant, make sure not to make a hole in the eggplant.
  2. Soak them in salted water for half an hour.
  3. For stuffing mix well meat, rice, margarine, salt allspice.
  4. Fill each eggplant (3/4 full) with the mix
  5. Arrange in a pot
  6. Add onions chopped
  7. Add tomatoes diced
  8. Cover with water to 2 cm above eggplant
  9. Cook on stove top for 30 minutes on high heat
  10. Cook on stove top for another 40-50 minutes on low heat/ until rice is cooked.

Battir is famous for its eggplant- Battiri type. It is harvested in August. Usually it is affiliated with eggplant Festival in Battir. Of course eggplant is used in other foods. The eggplant is picked fresh from the Battir Terraces – Jenan.
