  1. Boil some water in a small pot, then add some peas and diced scraped carrots.
  2. Beat 2 eggs with a hint of salt into a bowl. Then add grated Parmesan cheese, peas and boiled and drained carrots, a hint of nutmeg and curry.
  3. Stir well all ingredients.
  4. Heat up a shred of olive oil in a small pan over a medium heat, then add the egg mixture.
  5. Cook the mixture on one side, then turn it on the other one by using a lid. Cook the other side and eventually serve the omelette sprinkled with a handful of ground parsley.
