- 2Kg eggplant
- 1/2cup olive oil
- Cooking oil
- 1 Lemon Juice
- large onions
- 4gloves garlic
- 1/4tablespoon salt
- 1dash Pepper

- 1. Cut eggplants in one inch cubes
- 2. Fry them in oil until tender
- 3. Mince Garlic, Onions, Parsley
- 4. Mix everything together :Garlic + onions + salt + pepper + lemon juice + olive oil + parsley
