  1. Empty the inside of the eggplant, make sure not to make a hole in the eggplant.
  2. Soak them in salted water for half an hour.
  3. For stuffing mix well meat, rice, margarine, salt allspice.
  4. Fill each eggplant (3/4 full) with the mix
  5. Arrange in a pot
  6. Add onions chopped
  7. Add tomatoes diced
  8. Cover with water to 2 cm above eggplant
  9. Cook on stove top for 30 minutes on high heat
  10. Cook on stove top for another 40-50 minutes on low heat/ until rice is cooked.
