Ingredients
- 1kg small battiri eggplant
- 1 medium onion
- 1 medium tomato
- 1cup Rice
- 3/4kg minced lamb meat
- 50gram margarine
- 3tsp salt
- 1/2tsp all spice

Instructions
- Empty the inside of the eggplant, make sure not to make a hole in the eggplant.
- Soak them in salted water for half an hour.
- For stuffing mix well meat, rice, margarine, salt allspice.
- Fill each eggplant (3/4 full) with the mix
- Arrange in a pot
- Add onions chopped
- Add tomatoes diced
- Cover with water to 2 cm above eggplant
- Cook on stove top for 30 minutes on high heat
- Cook on stove top for another 40-50 minutes on low heat/ until rice is cooked.
