  1. Clean the birds well, making sure all the innards are discarded.
  2. Grate one of the onions and in the pot heat the oil and do a quick sauté of the onion (around 1 min.) then to that add the rice and stir in the spices
  3. Add the water and cook the rice for a few minutes (do not fully cook it, it will continue to cook in the oven)
  4. While the rice is on the stove, preheat the oven to 180°C
  5. Allow the rice mixture to cool slightly then stuff the pigeon.
  6. Place the stuffed pigeon in the baking dish, roughly slice the remaining onion and place with the bay leaves in the baking dish. (add the peppercorns too if you choose)
  7. Cover with foil paper and cook for about 40-45 min. then remove the foil and allow continuing cooking (about 15min.) until golden brown.

Is there some memory/historical event connected to this recipe? This dish is usually cooked in Egyptian homes in certain events. Example: during weddings and birthday parties and in some families the eve of the feast such as Christmas and Easter, it is served as a main dish, especially families coming from lower Egypt. We are trying to know the reason behind it but still we did not find. But also you can find it all year round in lot of houses in all Egypt.

This recipe has been transmitted from grandmothers to mothers and daughters, prepared and shared together. This dish has become popular in the menus of traditional Egyptian restaurants all over Egypt.
