هدف مشروع سلومد إلى تعزيز الحوار الإبداعي بين الثقافات، وتوحيد الهوية الثقافية المتوسطية المرتكزة على تراث الطهي المتوسطي

يعدّ النظام الغذائي المتوسطي نموذجاً غذائياً صحياً شائعاً تتشاركه جميع دول البحر المتوسط، وقد أوصى باتباعه العلم الحديث على نطاق واسع لناحية منافعه الصحيّة الجمة. يُعرّف مصطلح "النظام الغذائي" هنا بكلمة "داييتا" والتي تعني "طريقة العيش" باللغة اللاتينيّة. وقد توارث هذا النظام الغذائي من جيل إلى جيل، وأصبح جزءاً ثميناً من التراث الثقافي المشترك لدول البحر المتوسط، إذ يدمج بين تركيبة متوازنة من الطعام الذي يعتمد على منتجات محلية طازجة موسمية، ومناظر طبيعية، وتقنيات، وخصائص اجتماعية. وعلى مدى قرون، تطوّر هذا النظام الغذائي نتيجةً لموقعه الاستراتيجي ولقدرة شعوب المتوسط على الخلط والتبادل، فظهر كتراث ثقافيٍّ حيويٍّ فعّالٍ متطور. في العام 2013، اعترفت منظمة الأونسكو بأهمية النظام الغذائي المتوسطي، فضمته إلى لائحة التراث الثقافي غير الملموس. غير أن منظمة الغذاء والزراعة (FAO) تعتبره "تدهوراً إلى حالة الاحتضار" بسبب تطور العولمة المستمر. لذلك، فإن الحفاظ على تراث الطهي المتوسطي وتعزيزه، يمثّل هدفاً مهماً وملحاً.
